Ingredients for making salted palm heart pie:
For the quiche dough:
100 grams of butter
150 grams of grated mozzarella cheese
250 grams of wheat flour
1 teaspoon of chemical yeast
pickled palm water
For the heart of palm filling:
4 peeled and chopped tomatoes
1 chopped onion or leek
2 tablespoons of butter
100 grams of green or black olives
4 eggs
2 tablespoons of cornstarch (shallow spoon)
3 tablespoons of grated mozzarella cheese
½ cup sour cream
1 can of palm heart
Salt and pepper to taste
How to make Salted Heart of Palm Pie:
Prepare the salted quiche pie dough beating the butter and cheese in an electric mixer until a smooth mixture is obtained. Add the wheat flour and the sifted yeast together and also half the water from the hearts of palm preserves.
Tip: To make it easier to beat the butter, it should be at room temperature. If you want a more intense cheese taste, use gruyère cheese instead of mozzarella cheese.
Mix everything well, until you get a compact and consistent dough. If the dough is dry and cracking, add some filtered water. If it's too soft, sprinkle a little more flour and knead again until you get the point. Shape into a ball, as in the photograph, and set aside in the refrigerator.
Tip: This dough is not as soft as bread dough, the right point is a dough that does not stick to your hands.
Then prepare the heart of palm filling: heat a pan with the butter and finely chopped onion. Let it cook until it starts to brown, add the tomatoes, mix and leave for 5 minutes. Turn off the heat and set aside for 1-2 minutes to cool a little.
In a bowl beat eggs until foamy. Dissolve cornstarch in the remaining palm heart water and mix with the eggs. Also add the previous onion and tomato stew and the remaining ingredients: olives, cheese, cream and chopped hearts of palm. Season with salt and pepper to taste.
Roll out the dough with your hands into a pie pan with a removable bottom, so that the bottom and sides are lined, as shown in the photo. Bake in a preheated oven at 200ºC for 10 minutes and remove. Place the stuffing prepared in the previous step and return to the oven for another 35-40 minutes or until golden.
When the palm heart quiche is golden and consistent, you can remove it from the oven and serve! This palm heart pie can be served hot, warm or cold. Serve with a salad and good appetite!
